- 2 cups cooked white rice preferably day-old
- 1 tbsp soy sauce low sodium
- 1 tbsp sesame oil
- 2 tbsp vegetable oil for frying
- 1 cup mixed vegetables carrots, peas, and corn
- 2 eggs lightly beaten
- 1 cup cooked chicken or shrimp optional
- 2 cloves garlic minced
- 2 tbsp green onions chopped for garnish
Preheat the Blackstone griddle to medium-high heat and add vegetable oil.
Add garlic and stir-fry for 30 seconds until fragrant.
Add mixed vegetables and cook for 2-3 minutes until slightly tender.
Push vegetables to the side and scramble the eggs in an open space.
Add cooked rice and spread it evenly on the griddle. Let it crisp for 1-2 minutes.
