Ingredients
  

Main Ingredients

  • 2 cups cooked white rice preferably day-old
  • 1 tbsp soy sauce low sodium
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil for frying
  • 1 cup mixed vegetables carrots, peas, and corn
  • 2 eggs lightly beaten
  • 1 cup cooked chicken or shrimp optional
  • 2 cloves garlic minced
  • 2 tbsp green onions chopped for garnish

Instructions
 

  • Preheat the Blackstone griddle to medium-high heat and add vegetable oil.
  • Add garlic and stir-fry for 30 seconds until fragrant.
  • Add mixed vegetables and cook for 2-3 minutes until slightly tender.
  • Push vegetables to the side and scramble the eggs in an open space.
  • Add cooked rice and spread it evenly on the griddle. Let it crisp for 1-2 minutes.
  • Stir everything together and add soy sauce and sesame oil. Mix well.
  • Garnish with green onions and serve hot.
