Ingredients
  

Capellini Pasta

  • 8 ounces dried capellini pasta
  • 2 cloves garlic thinly sliced
  • 3 ounces Parmesan cheese finely grated, plus more for serving
  • 1 large lemon zested and juiced
  • 1/4 cup olive oil
  • 1 teaspoon kosher salt plus more for pasta water
  • 1/2 teaspoon red pepper flakes plus more for serving
  • 1/4 teaspoon black pepper freshly ground

Instructions
 

  • Bring a large pot of heavily salted water to a boil. Add the capellini pasta and cook until al dente, about 3-4 minutes.
  • Reserve 1 cup of pasta water before draining the pasta.
  • In the same pot, heat the olive oil over medium heat until shimmering. Add the garlic and sauté until fragrant, about 1-2 minutes.
  • Reduce heat to low and return the pasta to the pot. Add 1/2 cup reserved pasta water, salt, red pepper flakes, and black pepper. Toss to combine.
  • Turn off heat and add the Parmesan cheese, lemon zest, and lemon juice. Toss until fully combined. Add more pasta water if needed for consistency.
  • Serve immediately, topped with extra Parmesan and red pepper flakes if desired.

Notes

For added protein, toss in cooked shrimp or grilled chicken. Fresh herbs like parsley or basil make a great finishing touch.
