Ingredients
  

Chicken Thighs

  • 4 pieces Bone-in or boneless chicken thighs

Seasoning

  • 1 tsp Salt Adjust to taste
  • 1/2 tsp Black Pepper Freshly ground
  • 1 tsp Garlic Powder Optional but recommended
  • 1 tsp Smoked Paprika For extra depth of flavor

Instructions
 

  • Preheat a water bath using an immersion circulator to the desired temperature from the options below.
  • Season the chicken thighs with salt, pepper, and any additional spices of choice.
  • Vacuum seal the chicken thighs in a sous vide bag or use the water displacement method with a zip-top bag.
  • Place the bag into the sous vide bath and cook according to the following temperatures and times:
  • 150°F (1-4 hours) - Very juicy and firm texture
  • 155°F (1-4 hours) - Juicy, mostly tender texture
  • 165°F (1-4 hours) - Juicy and completely tender texture
  • 165°F (4-8 hours) - Fall-off-the-bone, ultra-tender texture
  • Once cooked, remove the chicken from the bag and pat dry with paper towels.
  • Heat a skillet over high heat until smoking. Add a small amount of butter or oil.
  • Sear the chicken skin-side down for 1-2 minutes, then flip and sear for 1 minute on the other side.
  • Serve immediately and enjoy your perfectly juicy sous vide chicken thighs!
